Bean, Beans, The Musical Fruit

Beans can be the back bone of any vegetarian meal. However, beans aren’t very easy to digest. Some beans that are easier to digest than others include; pinto beans, adzuki beans, black-eyed peas, black beans, kidney beans and garbanzo (chickpeas). Some of the Indian pulses like mung dhal or masoor dhal are also easier to digest. Those beans that are harder to digest include navy beans, green and yellow split peas and brown lentils.
The best ways to make beans easier to digest is to make sure you clean the beans first in fresh water and then soak them for several hours (preferably over night). Soaking helps to loosen the skins and also realizes a gas causing sugar (oligosaccharides). If you want to do the job a little faster put the beans in a pot on the stove, cover them with water and bring to a boil. Take the pot of the heat, skim any foam and leave them soaking for a couple of hours.
After the beans have soaked for several hours they will be ready to be cooked.
Make sure you discard the soaking water and use fresh water to cook the beans. Cover the beans with 1-2 inches of fresh water and bring to a boil, skim of any foam. Boil for about 10 minutes uncovered to realize any gas causing sugars. Cover and simmer until they are soft. Don’t add any salt to the water as this will prevent the beans from softening. Make sure you cook the beans until they are soft.
Here’s an idea for a simple bean soup: Thoroughly wash 2 1/2 cups of 11 Bean Mix. Place in a large container, cover with water and add 2 tsp salt. Soak overnight. In the morning, drain and add 2 quarts (2 1/2 litres) of water. Bring to a boil and stir occasionally. Turn heat to low and simmer for 2 1/2 hours.
Add: 1 large onion, chopped, mixed vegetables, pasta, rice, tofu wieners (chopped), etc. Add: seasonings to taste. Simmer another 30 minutes.
A word of warning regarding canned beans. Always drain and rinse canned beans. They can be more gaseous than freshly cooked beans because they aren’t prepared the same way you would at home.
